Recipes of the Forgotten Realms: Cookies

Lately, thanks to the fact that I’ve been sending Mark to work with a tray of cookies every Friday, I have begun getting into some really wonderful cookie recipes.  I’m going to share two of the favorites both on my end and gauging from the feedback I’ve gotten.  I hope all of you enjoy them just as much!

Couatl Chocolate Chip Cake-Like Cookies

  • 1 c. butter (softened at room temperature)
  • 1 c. brown sugar
  • 1 c. sugar
  • 3 eggs
  • 1/3 c. milk
  • 1 tsp. vanilla
  • 2 c. all purpose flour
  • 2 c. cake flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • As many chocolate chips as you like :)   but at LEAST 1/2 a bag
  • Directions:
    Cream butter, sugars, vanilla and eggs together until well combined.  Add milk and stir in.  Then add combined flours, baking powder & baking soda in small increments being sure to incorporate fully.  Let chill in the refrigerator for 15 minutes and between batches.  Heat oven to 350 in that time.  Bake cookies for approximately 10 minutes on center rack… one cookie sheet at a time with this recipe.  Cool on cookie sheet for 2 minutes then transfer to a cooling rack or some wax paper.  It’s also of note that you can either drop these by rounded teaspoon fulls onto the baking sheet OR you can do what I do and use a very small ice-cream scooper and then I never have to worry about size uniformity :)

    Orium Orange Drop Cookies with Orange Glaze

  • 1 cup butter softened
  • 2 cups sugar
  • 3 eggs
  • 1/3 cup orange juice
  • 2 tablespoon grated orange peel
  • 1 1/2 tsp. pure orange extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Directions:

    In a mixing bowl, cream butter and sugar. Beat in eggs, orange juice, extract and peel. Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 12 minutes or until edges begin to brown. Remove to wire racks to cool.

    Once the cookies have slightly cooled then you can dip them top down into a shallow bowl full of the glaze (recipe follows)

  • 3 cups powder sugar
  • start with 1/4 c. orange juice.  Add more if you need it to create a thin glaze (Just coats the back of a spoon)
  • 1/4-1/2 tsp. orange extract
  • Directions:

    Stir till well combined.  Done ;0)
